The lembang at this place has a very unique taste. It contains both soy bean content and whole milk. While many places in Bandung sell tofu milk lembang, I highly recommend going to the restaurant located at Jl. Raya Lembang - Bandung No.177, Jayagiri, district. Lembang, West Bandung Regency, West Java 40391.

 

 

Here, you can watch the entire process of the tofu milk lembang being made. It starts with soaking the soybeans in water for 4 hours. They are then grounded and boiled for approximately 1 hour while being stirred periodically. Next, the soybean content is mixed in with whole milk, butter, salt, and tofu. 

From a wooden mould, the milk tofu is cut into pieces according to size. It is then boiled again and seasoned with turmeric or garlic powder, depending on which flavour of tofu is being made. Lastly, once the delicate milk tofu has cooled, it is wrapped and ready for consumption. The process of making tofu milk lembang is not very different from making the typical tofu. What makes this dish unique is its additional ingredient of fresh cows' milk.

 

The restaurant offers this dish in two variations—in its original form, soft ready-made tofu milk lembang, or deep fried. One way to enjoy the tofu milk lembang is by dipping the tofu in sambal sauce, so you can pair the spiciness with the savoury milk tofu.
